1 cup butter (1/

2 cup, softened)

1/4 cup confectioners’ sugar

1 1/

2 cups all-purpose flour, divided 1/

3 cup quick-cooking oats

1/4 teaspoon salt

4 OHIO eggs

1 cup granulated sugar

1 1/

2 teaspoons vanilla extract

3 (8-ounce) packages cream cheese, softened

1 cup light brown sugar

1 large tart apple, peeled and chopped 1 cup chopped pecans

APPLE STREUSEL

Preheat oven to 375o. In mixing bowl, combine 1/2 cup softened butter and

confectioners’ sugar; mix well. Stir in 1 cup flour, oats and salt; mix until

crumbly. Pat crust mixture into 9-inch springform pan; prick with fork. Bake

10 minutes or until lightly browned. Cool. Lower the oven temperature to

350o degrees.

In small bowl, beat eggs until light. Gradually add granulated sugar and

vanilla. In large bowl, beat cream cheese until fluffy. Gradually add egg

mixture; mix well. Do not overbeat.

In bowl, combine remaining 1/2 cup flour and brown sugar for streusel

topping. Cut in 1/2 cup butter until crumbly. Arrange apples over crust; top

with nuts. Sprinkle with half of streusel mixture. Spoon filling over streusel.

Top with remaining streusel mixture. Bake 50 to 55 minutes or until set.

Gently loosen the side of the cheesecake from the pan. Cool completely.

Chill 4 hours. Garnish with apple slices and chopped pecans.

Preheat oven to 350o . Prepare brownie mix according to package directions. Spoon batter in 9-inch springform pan. Bake 20 minutes. Cool. Reduce oven temperature to 325o .

In large bowl, beat cream cheese until fluffy. Gradually beat in milk. A dd chips, eggs and vanilla; mix well. Pour filling over baked brownie. Place pan in a large baking pan with 1-inch hot water (keeps brownie from overbaking). Bake 50 to 55 minutes or until center is almost set. Turn oven off; remove baking pan with water. Let cheesecake cool in oven 30 minutes. Remove cheesecake from oven; chill 1 hour. Remove side from springform pan. In small saucepan, melt chips with shortening; stir until smooth. Spread chocolate glaze over top and sides of cheesecake. Chill 3 hours. Garnish as desired.

Preheat oven to 350o . In bowl, combine crumbs, 1/4 cup sugar and 2 tablespoons flour. Stir in melted butter. Press firmly on bottom and up side of 9-inch springform pan. Bake 8 minutes. Cool.

In large bowl, beat cream cheese and remaining 1 cup sugar and 2 tablespoons flour until smooth. Add eggs, one at a time, grated orange peel, and vanilla; mix just until blended. Pour filling over crust. Place in a shallow baking pan; bake 45 to 50 minutes or until center is almost set. Run a knife around the outside edge of the springform pan; cool 15 minutes and remove the springform pan collar. Cool an additional 30 minutes, then cover and chill.

Before serving, spread melted marmalade over top of cheesecake. In small saucepan, melt chocolate chips and shortening. Drizzle chocolate over top of cheesecake. Garnish with orange curls.

Preheat oven to 350°. In a small bowl, combine crumbs and confectioners’ sugar; stir in melted butter. Press mixture on bottom of 9-inch springform pan. Set aside. Combine raspberries and sugar; set aside.

In large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk. Add eggs, one at a time, cornstarch and vanilla; mix well. Be careful not to overbeat. Divide batter in half; stir 1 cup of the melted chocolate into one-half of the batter. Pour over crust.

Gently stir raspberry mixture into remaining batter. Spoon the raspberry batter over the chocolate batter, beginning on the outer edge, working into the center. Place pan in a shallow baking pan.

Bake 50 minutes or until the center appears nearly set when the pan is gently shakened. Cool 15 to 20 minutes; gently loosen the side of the cheesecake from the pan. Cool completely before removing the springform pan.Cover; chill 4 hours or overnight. Drizzle with additional melted chocolate chips and garnish with whipped cream and fresh raspberries.

15种入门级的烘焙食谱超详细做法! 说起烘焙,我以前也觉得很难。比如很多饼干只要有人会做,就会觉得好高大上啊,但是后来自己试了试,发现饼干纯粹是烘焙的入门而已,只要材料齐全就可以做。 科普一点小知识吧: 1、对很多烘焙新手,都会有这个问题:低筋、中筋、高筋面粉是个啥、有什么区别 简单来说,低筋面粉适合做饼干、蛋糕;中筋面粉就是一般用的面粉,适合做馒头包子等等;高筋面粉一般用来做面包,就是这么简单。 2、做大部分饼干的时候,180度上下火15分钟就可以搞定的。还有加了大量黄油的饼干做好以后,要冷了才会变脆,不要认为自己没做好。 3、有些饼干烤前,面团需要冷冻,是因为冷冻一下方便切片,没有其他的原因。 4、还有在饼干里面加入鸡蛋液,是为了是饼干更酥脆并且增加凝固力,一般说的全蛋液就是“蛋白+蛋黄”一起打散,有少许饼干只需要蛋黄液,就像这样。 -蔓越莓饼干- 材料: 黄油200克,底筋面粉300克,蔓越莓干920克,鸡蛋1个,糖粉90克 做法: ①黄油室温放软,加入糖粉用手动打蛋器打均匀 ②加入40毫升蛋液,再搅打均匀,加入蔓越干搅拌 ③筛入低筋面粉和成饼的干面团 ④取一块面放在保鲜膜上,隔着保鲜膜压成长方形,整好形的饼干胚子放入冰箱冷冻1小时 ⑤取出切片,烤箱预热160度,烤20分钟左右颜色微黄即可 -杏仁饼干- 材料: 低筋面粉270克,黄油130克,杏仁60克,糖粉50克,鸡蛋1个 做法: ①黄油软化后,加入糖粉搅拌均匀,加入打散的鸡蛋一个,搅拌均匀,倒入稍微压碎的杏仁,再次搅拌均匀 ②倒入低筋面粉,拌匀大致揉团后,均分成两块,分别整理成方形长柱状,放入冰箱冷冻 ③15分钟后取出,再稍加整理成型,继续冷冻30分钟后取出直接切片,厚约6毫米即可 ④放到铺了锡纸的烤盘中,进预热号的烤箱,180度大约15至20分钟,烤到表面诱黄即可

【戚风蛋糕】(分量:8寸圆模一个) 配料:鸡蛋5个(约50克/个),低筋面粉85克,色拉油(无味蔬菜油)40克,鲜牛奶40克,细砂糖60克(加入蛋白中),细砂糖30克(加入蛋黄中) 烘焙:170度,约1小时。 (制作6寸圆模配料的分量全部减半。但因为配方内5个鸡蛋减半不容易计算,为方便计算,可将配料全部乘以0.6制作6寸圆模一个。6寸圆模的烘焙参考温度为180度,35分钟) 制作步骤: 1、准备材料。面粉需要过筛,蛋白蛋黄分离,盛蛋白的盆要保证无油无水,最好使用不锈钢盆。 2、用打蛋器把蛋白打到呈鱼眼泡状的时候,加入1/3的细砂糖(20克),继续搅打到蛋白开始变浓稠,呈较粗泡沫时,再加入1/3糖。再继续搅打,到蛋白比较浓稠,表面出现纹路的时候,加入剩下的1/3糖。(如果一次加入糖过多,会妨碍蛋白的起泡,所以打蛋白的时候,一般习惯使用分次加糖的方式。当然,这并不代表你一次把糖全加进去,蛋白就打不发了,只不过会更花功夫哈。) 3、再继续打一会儿,当提起打蛋器,蛋白能拉出弯曲的尖角的时候,表示已经到了湿性发泡的程度。如果是做戚风蛋糕卷,蛋白打发到这个程度就可以了。但如果制作常规的戚风蛋糕,就还需要继续搅打。 当提起打蛋器的时候,蛋白能拉出一个短小直立的尖角,就表明达到了干性发泡的状态,可 以停止搅打了。

看一看干性发泡的大图。蛋白打发的程度非常关键,右上角是打蛋器上残留的蛋白,注意观察它的形状。

打到干性发泡以后,就不要继续搅打了,如果搅打过头,蛋白开始呈块状,会造成戚风制作的失败。把打好的蛋白放入冰箱冷藏,开始制作蛋黄糊。 4、把5个蛋黄加入30克细砂糖,用打蛋器轻轻打散。不要把蛋黄打发。 5、依次加入40克色拉油和40克牛奶,搅拌均匀。再加入过筛后的面粉,用橡皮刮刀轻轻翻拌均匀。不要过度搅拌,以免面粉起筋(面粉如果起筋,可能会使蛋糕的口感过韧,影响蛋糕口感的松软)。 这是做好的蛋黄糊。

安徽新东方西点老师教你提拉米苏黑森林布朗尼三大欧式蛋糕制作 “西点”是中国人对西式甜点的统称。它同中华烹饪一样,在世界上享有很高的声誉。欧洲是西点的主要发源地、英国、法国、西班牙、德国、意大利、奥地利、俄罗斯等国家已有相当长的历史、并在发展中取得显著成就。西点蛋糕房里最受国人欢迎的三大欧式蛋糕非提拉米苏、黑森林和布朗尼莫属。下面看安徽新东方西点老师详述提拉米苏、黑森林和布朗尼三大欧式蛋糕制作方法。 布朗尼 布朗尼的制作方法: 食材准备:30CM*25CM*5CM烤盘、鸡蛋5个、砂糖150克、高筋面粉150克、低筋面粉150克、盐1/4小匙、可可粉50克、无盐黄油150克、巧克力200克、朗姆酒(或白兰地或白葡萄酒)1大匙、碎核桃仁适量 制作步骤: 1、5个鸡蛋打入盆中,加入糖略拌匀。隔水边加热边搅拌至手摸不会烫手的温度时离火,隔着热水用打蛋器打发至乳白浓稠状。 2、将巧克力切成小块,黄油切成小块,隔水加热至溶化,加入朗姆酒,再倒入全蛋糊中拌和。 3、高、低粉及可可粉、盐混合均匀,筛入全蛋巧克力糊中拌均。 4、倒入模型中,如果你的模型不是不粘模,就要铺油纸。抹平轻摔震出气泡,撒上碎核桃。160度预热10分钟后放在烤箱最下层烤20分钟,再移至中层烤10分钟,取出脱模切小块即可。 注意事项 1、也可以用300克的中筋面粉来代替高粉和低粉。 2、糖的份量最好不要减,不然烤好的蛋糕会有苦味。 黑森林 黑森林的制作方法: 材料:全蛋850公克,糖540公克,乳化剂30公克,鲜奶120公克,低筋面粉294公克,可可粉147公克,液体奶油80公克,动物性鲜油500公克,酒酿黑樱桃适量,樱桃香甜酒50公克。 做法: 1、将蛋白加煻一起打至九分发,用手指沾取呈尖挺状,且不滴落为止。 2、将乳化剂与鲜奶混合打发后,加入蛋黄一起搅拌至呈乳沫状,再将蛋白加入鲜奶溶液中混合均匀。 3、低筋面粉与可可粉混合过筛,加入搅拌均匀的蛋糊中,并用手或刮刀拌匀。 4、加入液体奶油拌匀,即成面糊,然后倒入烤模中,以上火170℃、下火180℃的温度,烤
