Why doesBritish foodhave a reputation forbeing so bad? Be cause it is bad!Thoseare notthemost encouraging words to hear just before eating lunch at one of HongKong's smartest British restaurants,Alfie's byKEE, buthead chef Neil Tomes has more to say.

"Thepast 15yearsor sohavebeen a noticeable period of improvementfor food in England," the English chef says, ci ting the trendinBritish cuisine for better ingredients,prepa rationand cooking methods,and more appealingpresenta tion.Chefs such as Delia Smith,Nigel Slater,Jamie Oliver and Gordon Ramsay made the public realise that cooking -and eating- didn'thave tobe a boring thing.And now,most of the Briti sh publicisfamiliar even withthe extremes ofHeston BlumenthaPsmoleculargastronomy,a form ofcookingthat employs scientific methods to createthe perfectdish.

"It'sno longer the case that the common man in England is embarrassed to show he knows about food," Tomes says.

There wasplenty of roomforimprovement. Theproblemswiththenation's cuisinecan be traced back to theSecond W o rldW ar.Before the War, muchofBritain's food was importedandwhen GermanU-boats beganattacking ships bringingfood to thecountry, Britain went onrations (配给)."As rationingcame to an end inthe1950s, technologypic kedupandwas usedtomass-produce food," T omes says.

"And bythen peoplewerejust happy to have a decentquant ity offood in their kitchens."

Theyweren'tlooking for cured meats,organic produceorbeautiful presentation;they were lookingfor whatever the ycould get their hands on, andthis prioritisation ofquantity ov erquality prevailedfor decades, meaninga generationwasbroughtup with food thatcouldn't compete with neighbou ring France,Italy, Belgium or Spain.

Beforestar chefs such as Oliver beganmaking cookingfas hionable, it was hard to find arestaurant in Londonthat was open after9pm. Butin recentyears the capital's culinary (烹

With the opening of Alfie's in April,andotherssuch as Th ePawn,two years ago, modern Britishfood has made it swayto HongKong."With British food,I think thatHong Kongrestaurantsare keepingup," says David T amlyn,theW elsh executive chef at ThePawn in Wan Chai. "Hong Kong diners areextremelyresponsive to new ideas or presentations, whic his goodnews for new dishes."

Chefs agree that diners in HongKong are embracing themodern British trend. Some restaurants aremodifying therecipes (菜谱)ofBritish dishes to breathe newlife into the classics, while othersare usingbetter quality ingredients butremaining true to British traditions and tastes.

Tamlynisin the second camp. "We select our foodvery p articularly. W e use USbeef,New Zealandlamb andforo ur custards(牛奶蛋糊)we use Bird's Custard Powder," Tamlynsays. "Some restaurantsgo for custard madefresh with eggs, sugar and cream,butBritishcustard is different,and we stay true to that."

Matthew Hill,senior manager atthetwo-year-old SoHorestaurantY orkshire Pudding, also uses better ingredientsasameans of improving dishes."There are a lotofexisting perceptionsabout British food and so we can't alterthese too much. We're a traditional British restaurant sothere are some staples (主菜)that will remain essentially unchanged."

Thesetraditional dishes includefish andchips,steak andkidneypie and largepieces of roastedmeats. At Alfie's, thenewest of theBritishrestaurants in town andperhaps themost gentlemen'sclub-like in design,Neil T omes explains hispassi

"W e can get alot ofour ingredients oncea week from the UK," T amlyn explains. "But there is alsopressure to buylocal and save on food miles, which means we take our vegetables from the localmarkets, andthere are a lot that work well with British staples."

The Phoenix,inMid-Levels, offers the widest interpretation o f"British cuisine",whilestill trying to maintainits soul.The gastro-pubhas existed in variouslocations in Hong Kong since2002. Singaporean headchef T ommy T eh Kum Chaioffers daily specials on ablackboard, rather than sticking to amenu. This enables him toreinterpret Britishcuisinedependingon what is available inthe local markets.

"We usealot ofingredientsthat people wouldn't perhapsassociate as British, but are presented in a British way. Bell peppersstuffedwith couscous,alongside ratatouille,is a very popular dish."

Althoughthe ingredientsmay not strike dinersasbeing t raditional,they canbe found in dishesacross Britain.

Even the traditional chefsareaware of the needto adapt to localtastesand customs,while maintainingthe Britis hnessof their cuisine.
