浅谈中国菜名的翻译

我国悠久的历史和广袤的国土孕育了中国独特的烹饪艺术和丰富的饮食文化。我们国家也以几千年的饮食文化文明于世。随着我国经济飞速发展，与国外交流日益增多，餐饮业也面临着走向世界的机遇和挑战。中国菜名是汉语语汇中承载中国文化最多的语汇之一, 不仅承载着几千年来的中国饮食文化, 还承载着大量的非饮食文化, 如神话、民俗、历史、文学、宗教信仰等等, 在菜名所传达的表层语义背后有着更为深厚复杂的多元文化元素。同时由于饮食与文化的密切联系，这些都大大增大了翻译的难度。

1.首先我们来看一下一些我们常见的错误翻译

长期以来，菜名的翻译没有统一的标准，加上译者水平有限和地域差异，并不了解菜式的内涵，致使很多菜名的翻译让人感到不知所云。比如口水鸡slobbering chicken、童子鸡chicken without sexual life、夫妻肺片the couple’s lung 等，这翻译让外国人看了都吓跑了，哪里还有食欲吃饭呢？再如东坡肉poet Dongpo’s braised pork，东坡肉是用蒸的方法做出来的，所以这里应该为Poet Dongpo’s steamed pork 而不是用braised；“鱼香肉丝”较常见的有两种译法，另外也有人译为shredded pork with garlic sauce，前者译法为直译，后者加了简单的解释，虽然看似简单易懂，很直观，但是译者没有弄清楚此菜的配料，川菜口味浓重，很多菜肴的配料都是少不了“川菜之魂”郫县豆瓣酱，鱼香肉丝正是用到此配料，是不用所谓的大蒜酱，所以后者翻译存在误的地方；水煮鱼，也是川菜中的代表作，又麻又辣，有译者翻译为tender stewed fish，这个译法不够全面，应该在后面加上in chili sauce；夫妻肺片译为pork lungs in chili sauce，这个译法的译者应该不明白此菜的来历和主料，夫妻肺片根本不是用猪肺做成的，而且和肺一点都不沾边，此菜的主料都是用牛内脏，所以这个译发讲不通。对于以上的翻译错误我们不能只是一笑而过，我们应该感受到菜名翻译的难度，从而思考怎样才能更好的翻译来达到最佳的效果。

2 .中国菜名难翻译的原因

①中西餐饮词汇不对等

由于世界各国地域，气候差异，形成了不同的饮食习惯和烹饪方法。相对于中国菜而言，西方菜肴选材简单，烹饪方法单一，而中国菜选材讲究，精于刀工，调味丰富，善于炊技，造成了英语中烹饪和饮食方面的词汇较少，逐渐形成了中英饮食词不对等。比如，汤圆、粽子、饺子、包子、锅贴等食物，在国外是没有这类食品的，前三者都可以用“dumpling”，但是这三种食物根本不是同一种食物，里面所包含的文化涵义也是大相径庭。汤圆也可以译作a glutinous rice ball，粽子可以直接音译zongzi，饺子也可以采用音译jiaozi。再如，中国人过年吃的“年夜饭”，这三个字包涵了很多文化信息在里面,应该译为“family reunion dinner on the Eve of Spring Festival”，这样外国人就能明白“年夜饭”到底是怎么回事了②中国菜名独特的文化内涵和工艺特点

欧美的菜名表达形式朴实，简洁明了，直截了当, 突出原料, 虽然少了艺术性, 但是多了实用性。以肯德基餐厅为例, 光从店名就知道, 这是一家炸鸡店, 而店中的食品如炸鸡腿、香辣鸡翅、汉堡包,以及新推出的墨西哥鸡肉卷和海鲜汤等, 几乎都是以原料加上烹饪方式或者地名来命名的。而中国的很多菜名中往往包含了很多历史、文化的信息。讲究文雅、含蓄和吉利, 注重表情、联想能力, 少量大众菜肴以原料命名，很多菜名包涵了文化典故或者明间传说，有的菜名反映了菜肴的造型特征，有的菜名以人名和地名来命名。这些方面的因素都增加了翻译的难度。

以上我们谈论了一些错误的翻译以及难译的原因，下来我们看看对菜名的翻译我们应该注意什么和怎样译才能达到比较理想的效果。

下面我就三个对中国菜名翻译的方法简单谈谈，直译发、意译发、音译发。

1、直译法

以原料命名的菜不加修辞, 直译最为简便, 烹饪方法不必译出。中菜汤类命名一般按此方

法, 翻译时采用原料加汤的处理方法。如: 双冬牛肉 Beef with Mushroom and Bamboo Shouts；口蘑菜心Mushrooms with Cabbage Heart；青椒肉丝Shredded Pork and Gr een Chili；豆腐汤Bean Curd with Mushroom Soup；荷包蛋Poached Egg；人参鸡Chicken with Ginseng;坛肉Pock in Pot;糖醋排骨Sweet and Sour Spare Rib.直译能使目的语言与源语用基本相同的形式来表达相同的内容, 获取基本相等的效果。因此对于菜名翻译来说, 直译是可取且实用的方法。此外,在不违背西方文化的前提下, 对一些以传说、典故, 特别是以形象命名的菜肴, 仍可以采用直译的方法, 尽量在表达原译的同时保持原汁原味, 让海外游客在品尝佳肴的同时, 领略中国饮食文化的魅力。

2.意译法

语言有不同的文化内涵和表达形式, 当形式成为翻译的障碍时一般采用意译法。在中餐翻译中,意译法就是将抽象或带有联想性的菜名以具体清晰的方式表达出来, 译者常常可以采用解释、删减、借用、改写等手段。

第一解释

翻译时对原文本部分的字词用解释代替直译,这是十分必要的。比如一道常见的鱼香肉丝人直译为Fish - flavored Shredded Pork,也有人翻译成Shredded Pork with chili Sauce。后者作了简单的解释, 对于外国游客来说, 显得更为直观。类似的例子还有很多。如: 咕噜肉Sweet & Sour Pork,回锅肉Sliced Pork Doubly Sauteed in Soy Sauce,干煸牛肉丝Sauteed Beef Shreds,酱爆肉Quick- Fried Pork with Soy Paste,茄汁石斑鱼Deep Fried Garoupa with Tomato Sauce,鱼香三鲜Shrimp,Crab Meat & Lobsterin Garlic Sauce这样把菜式做一个简单的解释, 西方人就能仅凭菜单就可以对食物做出比较正确的判断想象。

第二删减

为了使菜名显得简明扼要, 有时在翻译时可以省略无关紧要的词语这样更容易让客人一目了然,更加清楚的明白菜肴的原料以及做法。如: 宋嫂鱼羹 Braised Fish Soup , 省略了宋嫂一词。只让外国人知道这到底是个什么东西就行，至于为什么叫“宋嫂”他如果感兴趣

我们可以慢慢讲给他。四宝豆腐煲Seafood and Bean Curd Pot,英文可省略四宝一词;金牌炸子鸡Roast Chicken,Cantonese Style 中省略了金牌一词。只告诉他们最主要的去掉牌子和典故，这样外国人更容易懂。

第三，借用

借用就是用西方人熟悉的菜名或主食名来翻译部分中餐菜名和主食, 常常会收到意想不到的效果。如:馒头Steamed Bread，蜜汁叉烧B. B . Q . Pork，四季叉烧豆Roast Pork with String Beans，蘑菇叉烧Roast Pork with Mushrooms，雪豆叉烧Roast Pork with Snow Peas。第四, 改写

在上文中谈到, 中国菜的命名讲究, 常常富有诗情画意, 给人以美好的联想和回味, 具有一定的审美价值。例如:龙凤呈祥这道菜是以蛇和鸡作为主要原料的,龙和凤是中国神话的产物, 是吉祥的象征。但是如果直译出来让人有莫名其妙的感觉, 这时候就必须对源文本进行改写, 直接把菜的内容反映出来, 即Snake and Chicken Soup, 使人一目了然。类似的例子很多。如:鱼米之乡Fried Minced Fish with Bamboo Shoots and Pine Nuts，黑白分明Fried Shrimp Balls with Black and White Sesame Seeds，蚂蚁上树Sauteed Bean Vermicelli with Spicy Meat Sauce，叫化鸡Baked Chicken Vagabond Style。此蚂蚁指的是用酱油和淀粉和过的肉末，直译可能引起惊诧。叫花鸡相传为乞丐创制, 取名时以“叫化”代“乞丐”是一种美化, 翻译时, 以“vagabond”代“beggar”也是一种美化。

3、音译法

菜名的音译在翻译时获得了很大的成功, 尤其是英译汉。中国人在接受西方饮食文化的时候似乎并无多大障碍。如:汉堡包hamburger、三明治sandwich、可口可乐Coca- cola 、巧克力chocolate能被广泛认同。语言是个符号系统, 在一定条件下可以接受外来词, 音译法能避免因直译或意译带来的误解和不可读性。在中国菜里, 有一部分是用地名、人名、象声

词或地方语来命名, 为了保持原有特色风味, 可采用音译法。如:麻婆豆腐 Ma Po Tou Fu，东坡肉 Dong Po Pork，北京烤鸭 Bei Jing Roasted Duck，毛氏红烧肉Chairman Mao’s Stewed Pork with Soy Sauce，东江酿豆腐Bean Curd Stuffed with Pork Mince,Dong jiang Style. 中国文化的博大精深决定了餐饮文化的多样性和复杂性，所以有时候只用一种方法进行翻译是不够的，必须综合使用多种方法。这是一个不争的事实: 无论一个菜名翻译得多么完美,这个译名都不可能全面完整地传达出汉语菜名本身所承载的语言文化信息与功能, 都明显地存在着没有译出来的成分和文化错位现象。但是一旦我们懂得了方法，什么时候该直译，什么时候该意译就能更达到预期的效果。

我国悠久的历史和广袤的国土孕育了中国独特的烹饪艺术和丰富的饮食文化。我们国家也以几千年的饮食文化文明于世。随着我们国家经济的发展和综合国力的提高，饮食这个产业不再仅仅局限于本国，对世界各地的影响越来越大。但是中国菜名不仅承载着几千年来的中国饮食文化还承载着大量的非饮食文化，如神话、民俗、历史、文学、宗教等等。在加上中西饮食词汇不对等和中国菜名独特的文化内涵和工艺特点，这些都加大了中国菜名的翻译。每当遇到中国菜名我们就不知道该怎么翻译，甚至闹出让人哭笑不得的笑话。所以本篇文章首先介绍了阻碍菜名翻译的两个原因，以及直译、意译、音译这三种方法，同时介绍了该在什么情况下用哪种方法更得当。通过这篇文章希望能提高我们大家对中国饮食的认识，对中国菜名翻译的把握从而提高我们的英语翻译能力。
